Ceea ce m-a cucerit cel mai mult a fost modul de preparare (cu mult mai simplu decat in cazul cozonacului nostru) si textura pufoasa, aerata a aluatului.<\/p>\n<p><strong>INGREDIENTE:<\/strong><br \/>\n<span title=\"Pour la p\u00e2te : \u00a0\u00a0\u00a0\u00a0\">Pentru aluat:<\/span><\/p>\n<p><span title=\"530 g de farine + 2 cuill\u00e8res \u00e0 soupe (id\u00e9alement de gruau si vous avez suivi mon article sur les farines) \u00a0\u00a0\u00a0\u00a0\">530 g de f\u0103in\u0103 + inca 2 linguri<br \/>\n<\/span><span title=\"100 g de sucre en poudre \u00a0\u00a0\u00a0\u00a0\">100 g de zah\u0103r pudr\u0103<br \/>\n<\/span><span title=\"2 cuill\u00e8res \u00e0 caf\u00e9 de levure de boulanger d\u00e9shydrat\u00e9e (1 sachet pour moi) \u00a0\u00a0\u00a0\u00a0\">1 pliculet (10 gr.) drojdie<br \/>\n<\/span><span title=\"1 petit citron \u00a0\u00a0\u00a0\u00a0\">coaja de lamaie rasa<br \/>\n<\/span><span title=\"3 \u0153ufs moyens \u00a0\u00a0\u00a0\u00a0\">3 oua medii<br \/>\n<\/span><span title=\"120 ml d'eau \u00a0\u00a0\u00a0\u00a0\">120 ml de ap\u0103<br \/>\n<\/span><span title=\"1\/3 de cuill\u00e8re \u00e0 caf\u00e9 de sel \u00a0\u00a0\u00a0\u00a0\">sare 1\/3 linguri\u021b\u0103<br \/>\n150 gr. <\/span><span title=\"150 g de beurre doux en morceaux \u00a0\u00a0\u00a0\u00a0\">unt moale, taiat \u00een buc\u0103\u021bi<br \/>\n<\/span><span title=\"Huile de tournesol \">ulei de floarea-soarelui<\/span><\/p>\n<p><span title=\"Pour la garniture : \u00a0\u00a0\u00a0\u00a0\">Pentru umplutura:<\/span><\/p>\n<p><span title=\"130 g de chocolat noir fondu \u00a0\u00a0\u00a0\u00a0\">130 gr. ciocolata neagra, topita<br \/>\n<\/span><span title=\"120 g de beurre doux fondu \u00a0\u00a0\u00a0\u00a0\">120 gr. unt topit<br \/>\n<\/span><span title=\"50 g de sucre glace \u00a0\u00a0\u00a0\u00a0\">50 gr de zah\u0103r pudr\u0103<br \/>\n<\/span><span title=\"30 g de cacao en poudre non sucr\u00e9 \u00a0\u00a0\u00a0\u00a0\">30 gr pudr\u0103 de cacao ne\u00eendulcit\u0103<br \/>\n<\/span><span title=\"100 g de noix de p\u00e9can (ou autre selon vos go\u00fbts) \">100g nuci pecan (sau alte nuci, \u00een func\u021bie de gusturile tale)<\/span><\/p>\n<p><span title=\"Pour le sirop : \u00a0\u00a0\u00a0\u00a0\">Pentru sirop:<\/span><\/p>\n<p><span title=\"130 g de sucre glace \u00a0\u00a0\u00a0\u00a0\">130 gr. zah\u0103r pudr\u0103<br \/>\n<\/span><span title=\"60 ml d'eau \">60 ml de ap\u0103<\/span><\/p>\n<p><span title=\"Pr\u00e9paration : \"><strong>PREPARARE aluat:<\/strong><br \/>\n<\/span><span title=\"La veille, commencez par pr\u00e9parer la p\u00e2te \u00e0 brioche.\">Cu o zi \u00eenainte, se prepara aluatul. Adauga in vasul robotului <\/span><span title=\"Pour cela, placez 530 g de farine, le sucre, la levure et les zestes du citron dans la cuve de votre robot.\">530 gr. de f\u0103in\u0103, zah\u0103rul, drojdia si coaja de lamaie. <\/span><span title=\"Attention, il ne faut pas que la levure et le sucre se touchent pour ne pas tuer la levure. \">Aten\u021bie! Nu l\u0103sa drojdia \u0219i zah\u0103rul sa se atinga,\u00a0 pentru a nu ucide drojdia (asa zice reteta!!!).<\/span><\/p>\n<p><span title=\"Avec le crochet, p\u00e9trissez pendant 1 minute, \u00e0 vitesse lente.\">Foloseste carligul si framanta timp de 1 minut la vitez\u0103 mic\u0103. <\/span><span title=\"Ajoutez les \u0153ufs un \u00e0 un en augmentant la vitesse petit \u00e0 petit, jusqu'\u00e0 arriver \u00e0 vitesse moyenne.\">Ad\u0103uga ou\u0103le pe rand. Treptat, cresti viteza pana la cea medie. <\/span><span title=\"Ajoutez l'eau et le sel, puis le beurre en morceaux petit \u00e0 petit.\">Adauga apa calduta (nu de la robinet!)\u00a0 sarea \u0219i untul bucata cu bucata. <\/span><span title=\"Laissez p\u00e9trir encore 10 minutes en ajoutant un peu de farine au fur et \u00e0 mesure si la p\u00e2te colle aux parois de la cuve.\">Lasi la framantat 10 minute, adaugand putina faina in cazul in care aluatul se lipseste de peretii vasului.<\/span><span title=\"J'ai eu besoin de 2 cuill\u00e8res \u00e0 soupe de farine, selon la taille de vos \u0153ufs, \u00e7a peut \u00eatre un petit peu moins ou un petit peu plus. \"><br \/>\nUngi cu putin ulei un alt vas si torni<\/span><span title=\"Huilez l\u00e9g\u00e8rement un r\u00e9cipient et versez la p\u00e2te \u00e0 l'int\u00e9rieur.\"> aluatul. Acopera-l si<\/span><span title=\"Recouvrez d'un linge propre et laissez pousser 1h30 \u00e0 temp\u00e9rature ambiante.\"> lasa-l s\u0103 creasc\u0103 1h30, la temperatura camerei sau langa o sursa moderata de caldura (calorifer, de exemplu)<\/span><\/p>\n<p><span title=\"C'est moche les photos de nuit... \">Dupa ce aluatul a crescut, il mai framanti putintel folosind pumnul pentru a scoate bulele de aer si il dai, acoperit, la frigider, unde va sta toata noaptea.<\/span><\/p>\n<p><strong>PREPARARE umplutura (a doua zi):<\/strong><\/p>\n<p><span title=\"Le lendemain, pr\u00e9parez la garniture en faisant fondre ensemble le chocolat et le beurre.\">Topesti \u00eempreun\u0103 ciocolata \u0219i untul. Adaugi <\/span><span title=\"Ajoutez le cacao, le sucre glace et le sucre en poudre et m\u00e9langez jusqu'\u00e0 ce que la p\u00e2te soit homog\u00e8ne.\">cacao, zah\u0103rul \u0219i amesteci pana la omogenizarea completa a ingredientelor. Intre timp, prajesti intr-o tigaie nucile tocate grosier. Afacerea aceasta te costa 5 minute si un foc mediu, mestecand din cand in cand.<\/span><\/p>\n<p><span title=\"Sortez la p\u00e2te du frigo et divisez-la en deux boules (une pour chaque brioche).\">Se scoate aluatul din frigider \u0219i se \u00eemparte \u00een dou\u0103 mingi. F<\/span><span title=\"\u00c9talez chaque boule sur un plan de travail farin\u00e9 en rectangles de 30 x 45 cm. \">iecare minge o intinzi cu sucitorul pana ce vei obtine un dreptunghi cu suprafata de 30 x 45 cm. Eu folosesc un pad dimensionat. Eu nu am procedat asa si l-am scos cu mare greutate, chiar l-am stirbit pe alocuri). Alege o tava de cozonac, suficient de incapatoare, altminteri, aluatul va deborda. Poti confectiona niste protectii laterale inalte facute din hartie de copt impaturita in 4. Vei vedea, aluatul va creste foarte mult si ciocolata va tinde sa se reverse in cuptor. Eu am pus si o folie de aluminium pe fundul cuptorului ca sa evit orice &#8220;scurgere&#8221;.<\/span><\/p>\n<p><span id=\"result_box\" class=\"\" lang=\"ro\"><span title=\"Laissez reposer 1h30 \u00e0 temp\u00e9rature ambiante, recouvert d'un linge propre (ou pr\u00e8s d'un chauffage s'il ne fait pas assez chaud chez vous). \">Acoperi tava si lasi din nou la crescut 1h30, la temperatura camerei sau in apropierea unei surse de caldura (caloriferul din bucatarie, in cazul meu).<br \/>\n<\/span><\/span><\/p>\n<p><span title=\"Enfournez pour 30 minutes dans un four pr\u00e9chauff\u00e9 \u00e0 190\u00b0C. \"><a href=\"https:\/\/www.dumitra.net\/blog\/wp-content\/fileStore\/2016\/12\/Krantz-cake8.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-8931\" src=\"https:\/\/www.dumitra.net\/blog\/wp-content\/fileStore\/2016\/12\/Krantz-cake8-300x200.jpg\" alt=\"Krantz cake8\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.dumitra.net\/blog\/wp-content\/fileStore\/2016\/12\/Krantz-cake8-300x200.jpg 300w, https:\/\/www.dumitra.net\/blog\/wp-content\/fileStore\/2016\/12\/Krantz-cake8-768x512.jpg 768w, https:\/\/www.dumitra.net\/blog\/wp-content\/fileStore\/2016\/12\/Krantz-cake8-600x400.jpg 600w, https:\/\/www.dumitra.net\/blog\/wp-content\/fileStore\/2016\/12\/Krantz-cake8-624x416.jpg 624w, https:\/\/www.dumitra.net\/blog\/wp-content\/fileStore\/2016\/12\/Krantz-cake8.jpg 800w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Se da la cuptor (preincalzit la 190 \u00b0 C) timp de 30 minute. Verifici, totusi, cu o scobitoare (sau alta ustensila ascutita) daca aluatul e copt. In caz contrar, prelungesti timpul de coacere.<br \/>\n<\/span><span title=\"Pendant la cuisson, A la fin de la cuisson, pr\u00e9parez le sirop en pla\u00e7ant dans une casserole le sucre glace et l'eau.\">La sf\u00e2r\u0219itul procesului de coacere, adica dupa ce ai scos minunea neagra din cuptor, se prepar\u0103 siropul. Apa si zaharul se fierb; stingi cand temperatura ajunge la 100 grade. N-ai termometru? Nu-i bai! Opresti cand observi ca amestecul s-a ingrosat.\u00a0 <\/span><span title=\"R\u00e9sultat, il a durci, il a fallu le refaire fondre et l\u00e0, cata, il \u00e9tait blanc moche une fois pos\u00e9 sur ma brioche (c'est seulement l\u00e0 que j'ai compris que c'\u00e9tait d\u00e9finitivement mort). \"><br \/>\n<\/span>Nu face siropul dinainte pentru ca se va solidifica si nu il vei putea folosi!!!!<\/p>\n<p><span title=\"Laissez ti\u00e9dir le cake avant de d\u00e9mouler, puis badigeonnez-le de sirop \u00e0 l'aide d'un pinceau alimentaire.\">Lasa prajitura sa se mai raceasca, o insiropezi apoi folosind o pensula alimentara si mananci cu mare moderatie. Este o bomba calorica!!!! De aceea si public reteta in ultima zi a anului, in speranta ca te vei multumi cu gustul&#8230;. fotografiilor&#8230;.. \ud83d\ude42<br \/>\n<\/span><\/p>\n<p><em><strong>La multi ani! Iti multumesc ca ma citesti si ca ma ierti pentru inconsistenta postarii retetelor. Meseria mea de baza este aceea de instructor de fitness si tehnician nutritionist (vezi aici despre activitatea mea sportiva <a href=\"https:\/\/www.facebook.com\/Dumitranet\">https:\/\/www.facebook.com\/Dumitranet<\/a>), iar aceasta pagina de retete este rodul cautarilor\/experimentelor mele culinare.
