Dac\u0103 stratul este prea gros, zah\u0103rul se poate arde dedesubt \u0219i r\u0103m\u00e2ne alb deasupra.<\/p>\n\n\n\n<p>Se las\u0103 la topit f\u0103r\u0103 s\u0103-l amesteca\u021bi (este tentant, dar nu face\u021bi asta acum).<\/p>\n\n\n\n<p>De \u00eendat\u0103 ce o zon\u0103 de zah\u0103r \u00eencepe s\u0103 se&nbsp;topeasc\u0103, amestec\u0103 \u00een ea cu o lingur\u0103 de lemn. Pe m\u0103sur\u0103 ce apar \u0219i alte astfel de zone, face\u021bi acela\u0219i lucru cu lingura. Dac\u0103 exist\u0103 por\u021biuni cu zah\u0103rul \u00eenc\u0103 netopit, nu-l amesteca\u021bi!<\/p>\n\n\n\n<p>\u00cencetul cu \u00eencetul, zah\u0103rul se \u00eenchide la culoare&nbsp;\u0219i se transform\u0103 \u00een&nbsp;caramel.&nbsp;<\/p>\n\n\n\n<p>Se fierbe sm\u00e2nt\u00e2na lichid\u0103 \u0219i se adaug\u0103 foarte fierbinte peste caramel.<\/p>\n\n\n\n<p>Aten\u021bie, diferen\u021ba de temperatur\u0103 poate provoca&nbsp;<strong>stropire<\/strong>!&nbsp;La fel, dac\u0103 crema nu este suficient de fierbinte, va face caramelul s\u0103 se r\u0103ceasc\u0103 \u0219i va crea cocoloa\u0219e tari.&nbsp;Va trebui s\u0103 le sparge\u021bi cu lingura de lemn (sau s\u0103 le scoti daca sunt prea mari, dar c\u00e2nd caramelul s-a racit).<\/p>\n\n\n\n<p>Nu uita\u021bi c\u0103 amestecul are \u00een jur de 150\u00b0C, asa ca este foarte cald!<\/p>\n\n\n\n<p>Continua\u021bi fierberea p\u00e2n\u0103 c\u00e2nd sm\u00e2nt\u00e2na se \u00eencorporeaza perfect \u00een caramel.<\/p>\n\n\n\n<p>Lu\u0103\u021bi de pe foc \u0219i l\u0103sa\u021bi s\u0103 se mai r\u0103ceasc\u0103.<\/p>\n\n\n\n<p>Ad\u0103uga\u021bi apoi&nbsp;untul rece buc\u0103\u021bi&nbsp;\u0219i&nbsp;gemele de sare pentru a sc\u0103dea temperatura \u0219i opri\u021bi fierberea.<\/p>\n\n\n\n<p>Dac\u0103 caramelul continu\u0103 s\u0103 se \u00eenchid\u0103 la
